Pineapple Carrot Cookies
Pineapple Carrot Cookies is an impressive dinner. Made with 2 (8 oz.) cans crushed pineapple, 3/4 c. butter, softened, 1/2 c. brown sugar, packed, 1/2 c. granulated sugar and 1 egg, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Drain pineapple (well).
Cream butter and sugars.
Beat in egg and vanilla.
Beat in pineapple, carrots, nuts and raisins. Combine remaining ingredients.
Beat into pineapple mixture until well blended.
Drop by heaping tablespoon onto greased cookie sheet.
Flatten tops with spoon.
Bake in 375Β° oven for 15 to 20 minutes.
Makes 3 dozen cookies.
