Beat eggs, sugar and oil. Sift together flour, salt, soda and cinnamon. Combine alternately with carrots and pineapple.
Add vanilla and nuts.
Pour into 3 small well-greased loaf pans or 6 medium size cans.
Bake at 350Β° for 1 hour or less, if smaller pans are used. Cans, 50 minutes.
