Piña Colada Wedges
Piña Colada Wedges is an moderately easy dinner. Made with 1 (8 oz.) pkg. cream cheese, 1/3 c. sugar, 2 tbsp. rum or rum extract, 3 1/2 c. cool whip and 1 (8 oz.) can crushed pineapple and juice, this recipe delivers authentic, satisfying flavors. Beat cream cheese with sugar and rum until smooth.
Fold in 2 cups of the Cool Whip, the pineapple with juice and 2 cups of the coconut.
Spread mixture in an 8-inch pan which has been lined with plastic wrap.
Invert pan onto serving dish and remove the pan and plastic wrap.
Spread with remaining Cool Whip and sprinkle on remaining coconut.
Freeze until firm (about 2 hours). Cut into wedges and top each piece with a cherry or pineapple.
