Pimento
Pimento is an easy dinner. Made with whole peppers, cold water and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash whole peppers.
Place in oven 6 to 8 minutes to loosen skin.
Dip quickly in cold water, then peel and cut up.
Place in jars and flatten.
Add salt.
Put jars in pressure cooker and process 15 minutes at 10 pounds pressure.
Add no liquid to jars.
