Picnic Potatoes
Picnic Potatoes is an moderately easy dinner. Made with 8 to 10 medium potatoes, 1 1/2 c. prepared ranch salad dressing, 2 c. shredded sharp cheddar cheese, 1/8 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Peel and quarter potatoes; place in a large saucepan or kettle and cover with water.
Bring to a boil; cook until tender. Drain and transfer to a large bowl; mash (do not add milk, butter or seasoning).
Add salad dressing and mix well.
Add cheese, salt, pepper and half of the bacon.
Spread evenly into a greased 13x9x2-inch baking dish.
Sprinkle with chives and remaining bacon.
Bake uncovered, at 350Β°F. for 20 minutes.
