Pickled Okra
Pickled Okra is an moderately easy dinner. Made with 4 large onions, 2 green sweet peppers, 1/4 c. salt, 4 c. vinegar and 4 c. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Grind onions and sweet peppers together.
Use coarse blade. Add salt.
Place in colander to drain; cover with a weight.
Leave for 3 hours.
Set vinegar, sugar and spices in large vessel.
Stir until sugar is dissolved.
Cut stems off okra and add to mixed liquid and ground vegetables.
Heat to almost boil.
Stir to keep from sticking.
Put in jar and seal.
Should set 3 or 4 months before using.
