Pickled Garden Relish
Pickled Garden Relish is an impressive dinner. Made with 1/2 head cauliflower, sliced, 4 carrots, cut in julienne strips, 2 stalks celery, sliced, 1 green bell pepper, sliced and 4 oz. roasted red peppers or pimentos, drained and sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine the vinegar, oil and seasonings in a large saucepan, stirring to dissolve sugar.
Add all other ingredients; toss to coat.
Bring to a boil on high heat; reduce to low and simmer, covered, for 10 to 20 minutes, or until cauliflower is crunchy but cooked.
Cool, then refrigerate a day before serving, stirring several times to marinate all ingredients equally.
Drain just before serving.
