Pickled Beets
Pickled Beets is an moderately easy dinner. Made with 3 qt. peeled, cooked beets, 2 c. sugar, 2 sticks cinnamon, 1 tbsp. whole allspice and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine all ingredients, except beets, in a large saucepan. Simmer 15 minutes.
Pack beets into hot jars, leaving 1/4-inch head room.
Remove cinnamon.
Bring pickling liquid to a boil. Pour hot liquid over beets.
Leave 1/4-inch head room.
Remove air bubbles.
Adjust caps.
Process pints and quarts 30 minutes in boiling water bath.
Yields 6 pints.
