Made with 16 c. tomatoes, peeled and chopped (use food processor), 4 c. onions, chopped, 1/4 to 1/2 c. cayenne peppers, chopped, 1/4 c. salt and 1 tsp. alum, this recipe delivers authentic, satisfying flavors.
