Petite Cherry Cheesecakes
Petite Cherry Cheesecakes is an moderately easy dinner. Made with 24 vanilla wafers, 2 (8 oz.) pkg. softened cream cheese, 3/4 c. sugar, 2 eggs and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Using tin muffin cups, put a paper liner in each cup and a vanilla wafer in the bottom of each liner.
Combine cream cheese, sugar, vanilla and lemon juice.
Beat until smooth and creamy. Pour filling into muffin cups to about 2/3 full.
Bake at 375Β° for 15 minutes.
Cool thoroughly.
Spoon cherry filling (about 1 tablespoon) on top of each cheesecake.
Top with a dot of whipped cream.
Makes 2 dozen.
