Persimmon Pudding
Persimmon Pudding is an moderately easy dinner. Made with 2 c. persimmon pulp, 2 c. sugar, 3 large eggs, 2 3/4 c. flour and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix pulp and sugar.
Then add eggs and beat well.
Combine flour, soda, baking powder and salt.
Add to pulp mixture, alternately with buttermilk.
Melt butter in a 9 x 13-inch pan. Add to mixture but leave enough to grease pan well.
Bake 50 to 60 minutes at 350Β°.
