Persimmon Date Nut Bar
Persimmon Date Nut Bar is an impressive dinner. Made with 1/2 c. butter, 1 c. sugar, 2 eggs, 1 c. blended persimmon pulp and 1 tbsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream butter.
Beat in sugar.
Add eggs, one at a time, beating well after each addition.
Stir soda into persimmon pulp, add to creamed mixture.
Combine flour, cinnamon, nutmeg, clove and salt; then add to mixture.
Blend in lemon rind, dates and nuts.
Turn into well-greased 9-inch square baking pan.
Bake in a 350Β° preheated oven for 30 to 45 minutes or until done.
Turn out on rack to cool.
