Persimmon Cookies
Persimmon Cookies is an impressive dinner. Made with 1 c. granulated sugar, 1/2 c. brown sugar, 1/2 c. butter or margarine, 1 egg and 1 c. persimmon pulp, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream together butter or margarine and sugar.
Add egg; beat. Mix soda with persimmon pulp.
Sift together dry ingredients.
Add persimmon pulp, then dry ingredients, to creamed mixture.
Stir in nuts and raisins.
Drop by teaspoonfuls onto lightly greased baking sheets.
Bake in a preheated 350Β° oven for 12 to 15 minutes.
Makes about 5 dozen cookies.
