Persian Potato Salad
Persian Potato Salad is an moderately easy dinner. Made with 6 white potatoes, 1 (15 oz.) can sweet green peas, 1 whole cut up boiled chicken, 1 1/2 c. mayonnaise and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dice, boil and drain the potatoes.
Drain peas.
Debone and dice the chicken.
Mix all ingredients together, saving 1/2 cup mayonnaise.
Form into an oblong shape on a meat platter.
Spread leftover mayonnaise on top.
Decorate with olives and tomatoes. Serves 12.
