Pepper Steak
Pepper Steak is an moderately easy dinner. Made with 2 lb. flank steak, pepper, 1 tbsp. bacon drippings, 2 onions, finely chopped and 1 can (10 1/2 oz.) beef consomme, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Slice meat across grain in thin 1/4-inch strips.
Season with pepper.
Heat bacon drippings.
Add meat and saute until brown on all sides.
Add onions and saute 5 minutes.
Add consomme.
Bring to boil.
Cover and simmer 3 minutes.
Stir in mushrooms and green peppers.
Simmer 5 minutes.
Stir in tomatoes; simmer 2 minutes. Blend butter and flour to make paste.
Stir into mixture in pan, a little at a time.
Cook, stirring constantly, until mixture thickens.
Place on preheated platter.
Garnish with parsley. Serve with rice.
