Pepper Rice
Pepper Rice is an moderately easy dinner. Made with 4 c. cooked rice, 1 small carton sour cream, 1 can sliced water chestnuts, 1 jalapeño pepper, diced and 1/2 c. or more grated monterey jack cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook rice according to package instructions, however, substitute chicken broth for the water.
Stir in sour cream, creamy Italian dressing, water chestnuts, jalapeño pepper and pepper juice.
Place in a greased 9 x 13-inch casserole dish. Cover with Monterey Jack cheese.
Bake in a 350° oven for 20 minutes.
