Pepper Jack Stuffed Chicken
Pepper Jack Stuffed Chicken is an easy dinner. Made with 2 oz. pepper jack cheese, 2 boneless, skinless chicken breasts, 1 tsp. mexican or taco seasoning and 1 tbsp. vegetable oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cut chicken into two 2 1/4 inch x 1 inch x 3/4 inch strips. Flatten chicken breast to 1/4 inch thickness.
Place a strip of cheese down center of each breast.
Fold chicken over cheese and secure with toothpicks.
Rub mexican seasoning over chicken.
In a large skillet, brown chicken in oil on both sides.
Transfer to a greased 8 inch square baking dish.
Bake uncovered at 350 degrees for 25 to 30 minutes or until chicken juices run clear.
