Made with 1 (28 oz.) can italian plum tomatoes with juice, 1 c. heavy cream, 2 garlic cloves, minced, 1 1/2 tsp. dried tarragon and 1 lb. penne, this recipe delivers authentic, satisfying flavors. Brown sausage meat; put aside.
In a heavy saucepan, combine the tomatoes with juice, cream, garlic and tarragon; bring the liquid to a boil, breaking up the tomatoes.
Add sausage; simmer mixture for 25 to 30 minutes or until sauce is thickened.
Cook penne 12 to 15 minutes in boiling water; drain well.
Toss with tomato sauce.
Sprinkle with Parmesan cheese and serve.
