Peggy's Mexican Meat Loaf
Peggy'S Mexican Meat Loaf is an moderately easy dinner. Made with 1 lb. ground chuck, 1 medium onion, 1 egg, 15 saltine crackers, crushed and 3/4 c. pace mild picante sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix ground chuck, onion, egg, crackers and 1/4 cup picante sauce.
Separate into 2 halves.
Spread one half in bottom of loaf pan.
Sprinkle Cheddar cheese on top.
Pour 1/2 cup picante sauce on top over cheese.
Cover cheese and sauce with second half of meat mixture.
Be sure to seal in all cheese.
Garnish top with swirls of ketchup and slices of bell pepper.
Bake at 350Β° for 1 hour.
Pour off fat drippings.
