Pecos Pasta Salad
Pecos Pasta Salad is an moderately easy dinner. Made with 4 c. cooked multi-colored spiral pasta, rinsed in cold water and drained, 1 c. sliced green onion, 2 c. diced tomato, 1 (4 oz.) can chopped green chilies, drained and 1/2 c. pitted, sliced black olives, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a large salad bowl, combine pasta, green onions, tomato, chilies, olives, corn, cilantro, lime juice and picante sauce. Stir to blend well.
Add enough mayo to coat salad ingredients well.
Refrigerate to let flavors blend before serving.
