Pecan Pumpkin Bread
Pecan Pumpkin Bread is an moderately easy dinner. Made with 2 1/2 c. all-purpose flour, 4 eggs, 1 c. whole wheat flour, 3 c. sugar and 16 oz. can pumpkin, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oven to 350.
Grease only the bottom of 2 9 X 5 inch loaf pans.
Lightly spoon flour into measuring cup; level off.
In large bowl, combine all dry ingredients, mix well.
In medium bowl, mix oil, water, eggs, and pumpkin.
Add flour mixture, beat for 1 minute at medium speed.
Fold in pecans.
Pour batter into prepared pans.
Bake at 350 degrees for 60 to 70 minutes.
Cool 10 minutes; remove from pans.
Cool on wire racks.
