Pecan Delight Pie is an moderately easy dinner. Made with 4 egg whites, 1 c. sugar, 1 3/4 tsp. baking powder, 1/2 c. soda crackers, crushed and 3/4 c. chopped pecans, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Beat egg whites until stiff while adding sugar and baking powder. Fold in crushed soda crackers, pecans and vanilla.
Pour into greased 9-inch pan and bake at 325Β° for about 30 minutes. When cool, top with whipped cream and sprinkle with pecans.
