Pecan Delight
Pecan Delight is an moderately easy dinner. Made with 23 ritz crackers, crushed really fine, 1 c. sugar, 1 c. pecans, 3 egg whites and cool whip, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat egg whites until very stiff.
Add sugar.
Fold in Ritz crackers and pecans.
Bake until done.
Cover with Cool Whip and more pecans.
