Pecan Balls
Pecan Balls is an moderately easy dinner. Made with 1 c. (2 sticks) butter or margarine, 1/2 c. sugar, 1/2 tsp. salt, 1 tsp. almond extract and 2 c. sifted flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream butter and sugar together in a medium bowl until light and fluffy.
Stir in salt, almond extract, flour and nuts.
Mix well.
Chill dough for several hours.
Shape dough into small balls; place on an ungreased cookie sheet.
Bake in moderate oven (350Β°) for 12 to 15 minutes.
Transfer to wire racks.
While still warm, roll in confectioners sugar.
When cookies have cooled completely, sprinkle with more confectioners sugar.
Makes about 5 dozen.
