Peanut Pasta Salad
Peanut Pasta Salad is an moderately easy dinner. Made with 1 (5 oz.) pkg. corkscrew macaroni, 1 (10 oz.) pkg. frozen peas and carrots, 1 c. salted peanuts, 1 c. cubed cheddar cheese and 2 hard-cooked eggs, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook macaroni, peas and carrots according to directions. Drain and chill in cold water.
Place macaroni and vegetables in a bowl and toss with peanuts, cheese, chopped egg and onion.
In a small bowl combine mayonnaise, mustard, relish, salt and pepper. Stir into macaroni mixture.
Chill until serving time.
