Peanut Butter Fudge

Cut up a medium size Irish potato.
Cook until tender.
Drain; mash while hot.
Add confectioners sugar until stiff enough to roll (you will need 2 to 3 boxes) on sugared board.
Spread with peanut butter and roll like a jelly roll.
