Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 1/2 tsp. corn oil margarine, 1 c. sugar, 1/2 c. water, 1/4 c. light corn syrup and 1 c. dry roasted peanuts, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Line a large electric skillet with foil.
Combine sugar, water, syrup and margarine on skillet.
Set temperature at 375Β°.
Cook, stirring occasionally, until syrup turns golden brown.
Stir in peanuts.
Continue stirring until mixture turns medium brown.
Add soda.
Stir vigorously.
Remove foil containing candy from skillet and let cool.
Remove sheet of candy from foil and break into pieces.
Yields 1 pound.
