Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1 c. white karo syrup, 1/2 c. water, 1 c. peanuts (1 lb. dry roasted) and 4 tbsp. margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix sugar, Karo and water in heavy pan, cook over medium heat, slowly.
Stir until sugar is dissolved.
Cook until soft ball stage (238°).
Add peanuts and salt.
Cook to hard crack stage (298°), stirring constantly.
Peanuts turn to golden brown, stir with wooden spoon, about 10 minutes.
Remove from heat.
Add butter, soda and vanilla.
Stir slightly.
It turns yellow.
Pour onto buttered jellyroll pan; flatten.
Break into pieces. Put into airtight container.
