Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 1/2 c. granulated sugar, 1 c. hot water, 1 scant c. light karo, 1 1/2 tbsp. butter and 2 c. raw peanuts (not salted), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Boil the first 3 ingredients to soft ball stage (230Β°), then add butter and peanuts.
Cook to hard crack stage, stirring constantly.
Remove from heat; add vanilla and soda.
Pour on greased surface.
As it cools, pull from edges to desired thickness and cut off.
