Pasta Fagioli
Pasta Fagioli is an moderately easy dinner. Made with 1 can white cannelini beans, 2 cloves garlic, chopped, 1/4 c. olive oil, 1 tbsp. parsley, chopped and 1/4 tsp. oregano, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute garlic in olive oil until golden.
Slowly add can of cannelini beans and stir.
Add parsley, oregano, basil and salt. Add 1 can of water to beans; stir and add tomato paste.
Cover and simmer for about 20 minutes.
In a 3-quart pot, boil water for pasta.
Cook according to package directions.
Drain and add beans. Heat through; stir and top with Romano cheese.
