Pasta Casserole
Pasta Casserole is an moderately easy dinner. Made with 1 medium onion, coarsely chopped, 3 medium garlic cloves, finely chopped, 2 tbsp. olive oil, 2 cans diced tomatoes and 1/4 tsp. crushed red peppers, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook onion and garlic in olive oil until soft.
Add tomatoes, crushed red peppers, salt and pepper.
Simmer 15 minutes.
Cook pasta and drain.
Mix Mozzarella cheese, pasta and spinach.
Add 2/3 cup Parmesan cheese; toss well.
Put into casserole dish, sprinkle with the rest of the Parmesan cheese.
Put under broiler until the cheese is golden brown.
