Passover Macaroons
Passover Macaroons is an moderately easy dinner. Made with 6 egg whites, 1/2 tsp. salt, 1 c. sugar, 6 or 7 blanched almonds and 1/4 c. matzo meal, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Beat egg whites and salt until soft peaks form.
Add sugar 2 or 3 tablespoons at a time until egg whites form firm peaks.
Grind or chop almonds very fine, then fold together all ingredients.
Drop by teaspoonfuls onto oiled baking sheet.
Flatten slightly with spoon or knife.
Bake at 350Β° for 20 minutes or until lightly browned and firm.
Let cool slightly, lift off baking sheet with spatula and finish cooling on wire rack.
Yields about 6 dozen small macaroons.
