Peel and slice apples (as for pie).
Add a little sugar, cinnamon and lemon juice. Set aside.
Beat 3 eggs and add 1/4 cup sugar and matzo meal.
Fold in apples.
Grease a 9-inch pie plate. Bake at 350Β° for 30 to 40 minutes.
