Party Jewel Cake
Party Jewel Cake is an moderately easy dinner. Made with 1 egg, well beaten, 1 c. pet milk, 1/4 tsp. salt, 1 1/4 c. fresh coconut and 1 c. cut candied cherries, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Bake cake mix according to directions on package in two or three 9-inch round cake pans.
Cool cake.
Mix well beaten egg, sugar, Pet milk, vanilla, salt and butter in a 2-quart saucepan. Cook and stir over medium heat until mixture thickens, about 8 or 10 minutes.
Do not boil.
Take off of heat.
Stir in coconut, nuts and cherries.
Spread cherry mixture between and on top of layers.
Decorate with nuts and cherries.
Chill 6 to 8 hours to let flavor blend.
