Pancho's Cheese Dip
Pancho'S Cheese Dip is an moderately easy dinner. Made with 2 tsp. ground cumin, 1 1/2 tsp. garlic powder, 1/2 tsp. black pepper, 1 can rotel tomatoes (drained) and 1 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine all ingredients except cheese in saucepan.
Bring to a boil and boil for 10 minutes.
Turn heat on low and cook until mixture thickens.
Remove from heat and pour in blender.
Add 1/4 of the cheese and blend until smooth.
Continue adding cheese 1/4 at a time until all is blended.
Store in refrigerator and is better if stored overnight.
