Scrub and peel off potatoes.
Dice into bite-size pieces with skin on.
Mix oil and onion mix together.
In lined baking pan, place potatoes; pour oil and onion mix mixture over potatoes. Bake at 425Β° for 45 minutes.
Salt and pepper to taste.
