Orange Raisin Cake
Orange Raisin Cake is an moderately easy dinner. Made with 3 c. master mix (see miscellaneous section), 1 1/2 c. sugar, juice of 1 orange, 2 eggs, beaten and 2/3 c. chopped raisins, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine mix and sugar.
Add enough water to orange juice to measure 1 cup of liquid.
Mix liquid and eggs together.
Stir 1 cup of egg mixture into mix; beat for 2 minutes.
Add remaining liquid, raisins and orange peel.
Beat for 1 minute longer.
Pour into 2 wax paper-lined, 8-inch square pans.
Bake in a preheated 375Β° oven for 20 to 25 minutes.
Frost as desired.
