Oprah's Potatoes
Oprah'S Potatoes is an moderately easy dinner. Made with 2 1/2 lb. each red potatoes and idaho potatoes, 1 1/4 c. (2 1/2 sticks) butter, cut in pieces, 1 1/4 c. bottled horseradish sauce (sold in most condiment aisles in supermarkets), 1 1/2 c. whipping cream or whole milk and salt and ground black pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Wash potatoes well, leaving skins on and cut them in half. Transfer to large kettle and cover with water.
Heat water to boil. Reduce to a simmer and cook until potatoes are tender, about 25 minutes.
Drain the potatoes well and return to the pot. Do not peel them. Add butter and begin to mash by hand. Add horseradish sauce, cream, salt and pepper. Continue to mash until texture is creamy but still slightly lumpy. Garnish with parsley.
