Olive Crostini
Olive Crostini is an moderately easy dinner. Made with 1/2 c. black olives, 1/2 c. green olives, 2 medium cloves garlic, 1/2 c. fresh parmesan, grated and 4 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Chop olives coarsely in food processor.
Transfer to medium bowl.
With machine running, drop garlic through feed tube and mince.
Add Parmesan, butter and olive oil.
Process to a paste. Add butter mixture to bowl with olives.
Fold in Monterey Jack and parsley.
Mix well.
