Okra Skillet
Okra Skillet is an moderately easy dinner. Made with 3/4 lb. fresh okra, 2 to 3 ears fresh corn, 1/4 c. finely cut-up lean pork (1/4 lb.), 1 medium onion and 4 medium tomatoes, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Prepare 2 cups sliced okra in cornmeal, salt and pepper.
Coat okra in meal mixture.
Cut enough kernels from cooked corn to make a cup.
Cook and stir pork and onion in skillet until pork is golden.
Stir in okra.
Cook 3 minutes.
Stir in tomatoes and corn.
Cover and simmer until corn is tender, 10 to 15 minutes. Stir in pepper.
