Oatmeal Refrigerator Cookies
Oatmeal Refrigerator Cookies is an moderately easy dinner. Made with 1/2 c. shortening (part butter), 1/2 c. brown sugar, packed, 1/2 tsp. vanilla, 3/4 c. flour and 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cream shortening; add sugar gradually.
Stir in vanilla and egg and beat until smooth and creamy.
Sift flour with salt and soda.
Fold flour mixture into creamy mixture and stir until smooth.
Last, fold in rolled oats and nutmeats until evenly distributed.
Form into roll.
Wrap in waxed paper and chill in refrigerator overnight.
Slice and bake in 350Β° oven 10 to 12 minutes.
I usually double the recipe.
