Oatmeal Muffins
Oatmeal Muffins is an moderately easy dinner. Made with 1 c. oats (uncooked), 1 c. buttermilk, 1 c. brown sugar, 1 egg, slightly beaten and 1 3/4 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine oats and buttermilk in a large bowl; let stand 1 hour. Add brown sugar and egg; mix well.
Combine the next 6 ingredients; stir into oat mixture.
Stir in oil, lemon rind and raisins.
Spoon into oiled muffin pans.
Fill half full.
Bake at 400Β° for 20 minutes.
Makes 1 dozen large or 18 medium muffins.
