Oatmeal Cake
Oatmeal Cake is an moderately easy dinner. Made with 1 1/4 c. boiling water, 1 c. quick cooking oats, 1/2 c. shortening, 1 c. white sugar and 1 c. brown sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Pour boiling water over oats.
Let stand 20 minutes.
Cream shortening, white sugar and brown sugar.
Mix with oats.
Add eggs and vanilla.
Sift together and add to mixture flour, soda, cinnamon and salt.
Bake in 9 x 14-inch pan for 25 minutes at 350Β°, then put on topping.
