Oatmeal Cake
Oatmeal Cake is an impressive dinner. Made with 1 c. quick oats, 1 stick butter, 1 1/4 c. boiling water, 1 c. sugar and 2 beaten eggs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix the first 3 ingredients together and let stand a full 20 minutes.
Combine the next 9 ingredients with oatmeal mixture. Bake in a 9 x 13-inch pan at 325Β° for 35 minutes.
While cake is baking, combine butter, sugar, milk and vanilla.
Combine in saucepan over medium heat.
Beat until butter melts and sugar dissolves.
Add 1 cup pecans and 1 cup coconut.
Spread over cake. Put back into oven until coconut browns slightly.
