Nutted Wild Rice
Nutted Wild Rice is an moderately easy dinner. Made with 1/2 lb. (2 c.) wild rice, 1 c. pecan halves, 1 c. golden raisins (optional), grated rind of 1 orange and 1/4 c. chopped fresh mint, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Place rice in strainer and rinse in cold water.
Put rice in heavy saucepan.
Add 5 1/2 cups chicken stock.
Bring to rapid boil.
Reduce to simmer and cook uncovered for 45 minutes (check in 30 minutes to make sure it isn't getting too soft).
Put thin towel in colander.
Drain rice and place in bowl.
Add rest of ingredients.
Needs to stand 2 hours to develop.
Serve at room temperature.
