Norwegian Cookie Cakes
Norwegian Cookie Cakes is an moderately easy dinner. Made with 2 tsp. unsalted butter, softened, 1 lb. unsalted butter, softened, 2 c. sugar, 4 eggs and 2 c. flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Preheat oven to 375Β°.
Grease 10 x 15-inch jelly-roll pan with 2 teaspoons butter.
Cream butter and sugar together.
Beat in eggs, one at a time.
Beat in vanilla and flour.
Mix in almonds. Spread batter evenly into the pan.
Bake 20 to 25 minutes until the surface is light gold color.
Let cool in the pan.
With a sharp knife, cut into small squares.
Makes about 2 dozen very rich buttery cookies.
