Norwegian Christmas Bread
Norwegian Christmas Bread is an moderately easy dinner. Made with 1/2 c. shortening, 4 c. sifted flour, 4 rounded tsp. baking powder, 2 c. raisins, chopped and 1/2 small container mixed fruit (1/2 pineapple; 1/2 cherry), this recipe delivers authentic, satisfying flavors. Cream shortening and sugar; add eggs.
Sift cardamon, flour and baking powder together (save out a small amount to mix with raisins and fruit).
Add to mixture, alternating the flour and milk.
Mix raisins and fruits with flour; add to total mixture. Put into 1 large loaf pan or divide between 2 small loaf pans. Bake at 375° for 10 minutes, then 350° for 40 minutes.
