Noodles is an easy dinner. Made with 2 eggs, slightly beaten with fork, pinch of salt, 2 1/2 egg shells water and flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Add a good pinch of salt to eggs.

Add water.

Add flour for a very good stiff dough.

Roll 1/2 of dough at a time.

Flour the board or table top so it does not stick.

Place the rolled sheets very thin, one of them on top of the other with flour between so not to stick together.

Then roll as for a jelly roll.

Slice very thin and shake out so the strings do not touch.

Have your chicken broth, beef or whatever you want boiling.

Add a few at a time and stir so not to stick to bottom of pan.

Do not overcook but be sure they are done, but not mushy.
