"No-Fat" Cream of Potato Soup
"No-Fat" Cream Of Potato Soup is an moderately easy dinner. Made with 3 potatoes, pared and sliced, 1 onion, minced, 2 c. fat skimmed chicken broth, 1 1/2 c. water and salt and white pepper to taste, this recipe delivers authentic, satisfying flavors. Combine potatoes, onion, broth and water in saucepan.
Simmer, covered, for 35 minutes.
Pour into blender or beat by hand until smooth.
Return to pan and bring to boiling.
Stir in milk. Reduce heat and simmer, covered, 4 to 5 minutes.
Sprinkle salt, pepper and chives on top.
Serves 8.
