No-Fat Brown Bread
No-Fat Brown Bread is an moderately easy dinner. Made with 1/2 c. self-rising cornmeal (white or yellow), 1/2 c. self-rising flour, 1/2 c. whole wheat flour, 1 tsp. soda and 1/3 c. dark molasses (more, if you like!), this recipe delivers authentic, satisfying flavors. Mix everything well.
Line just the bottom of a 4-cup glass measuring cup with wax paper.
Spoon in half of the batter.
Cover with plastic wrap with slits cut in it.
Microwave on Medium power for 3 minutes; rotate cup 1/2 turn and microwave another 2 1/2 to 3 minutes.
Do not overcook!
Bread is done when center springs back when lightly touched.
Let stand 10 minutes.
Take it out of cup; cook the second loaf.
